We offer a variety of classes for every age and skill level. You can register in person, over the phone or online. Classes fill up quickly!
To offer a better learning experience, we limit the number of students per class. Check out our calendar and contact us if you have any questions.
We also reserve the right to cancel a class due to insufficient enrollment . ONLY IF WE cancel a class, students will be notify 3 days before the schedule class and full payment will be either refunded or credit will be applied to another class.

Everything you see in the picture will be taught including but not limited to:

-Learn How to make Camilo’s signature silky smooth eggless buttercream two ways including the vegetarian/halal method.

You will be working with real cake that we will have pre-made for you.

-Covering a square cake in buttercream to achieve sharp edges.

-Learn how to carve your square cake to achieve the floating effect.

-Texturing your buttercream.

-Working with an airbrush machine to create gradient colours on your finished cake.

-Assembling your cake to create a stunning visual effect.

-Although you will be recreating a specific design in the class each specific technique being taught are easily applied to other projects.

Learn how to make an eggless buttercream that is sturdy and similar in taste and texture to SMBC or IMBC buttercream, learn how to use molds with fondant and new skills to help you transition from a hobby baker to professional baker.

Meet our Instructors

Chef Joe The Baker

Joe the Baker, LLC is a veteran-run business offering delectable pastries and catering services in Coppell, Texas.  Joe the Baker specializes in classic European pastries and cakes, which can be ordered online and picked up at the Coppell Farmer’s Market.

You may recognize Chef Baker from Food Network’s Sweet Genius, King of Cones, Beat Bobby Flay, and Chopped : Sweets.  As a former instructor at Le Cordon Bleu College of Culinary Arts, Baker is considered an expert in his field and is comfortable teaching all aspects of pastry.  Since graduating from L’Academie de Cuisine culinary school in Washington, DC, Joe has worked in a number of prestigious venues, including the Omni Dallas and the Mansion on Turtle Creek. 

 

Katrina Neville Cookie Artist

My name is Katrina and I am a cookie artist. I love to create cookie designs for any occasion and I have been honing my skills for close to 10 years now. 

I operate Dots and Bows Designs from my home locally in Wiley TX. I look forward to learning new techniques and I am completely self-taught. 

I am happily married to my handsome husband, Steven. We have three gorgeous children, Spencer 20, Regan 19, and our youngest Avery, who is 10. We moved to Texas 8 years ago and love to do all kinds of activities as a family. 

Leticia Guillen Cake Decorator

My name is Leticia and I specialize in making custom cakes and love to bring life to my client’s ideas.

I believe in doing it with passion or not doing it at all.  

I Do what I love everyday, improve my craft, and make my clients happy…that’s it, that’s what success is for me.

I approach every aspect of my life completely opened up to the idea of something amazing waiting ahead. Risk is not easy and I don’t take it lightly ,but its definitely worth the reward and experience!

French Macarons Class

In this class, students will learn tips, tricks, and techniques for making perfectly delicious macarons.  Chef Baker will also showcase pastry techniques that are used in other desserts, such as how and why to scale ingredients.  Participants will learn how to make a stable meringue, turn meringue into macarons, and add flavor and color to their confections.  While the cookies are baking, students will concoct an ultra rich egg yolk buttercream that is perfect for sandwiching macaron shells.  Each guest will take home the macarons they have made to share, show off, and enjoy!

In this class we will create a gum paste poinsettia, we will mold an decorate an edible ornament using Mexican paste, royal icing and wafer paper. We will complete our holiday composition with berries, pine cones, holy leaves and pine branches, all made with gum paste, wafer paper and royal icing. This class will be divided in two days. All of the materials are included. Lunch Included.
